Ingredients
2 bell peppers, sliced
1 onion, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste
8 tortillas
Toppings of your choice (salsa, avocado, cheese, etc.)
Directions
- Preheat your air fryer to 400°F.
- In a large bowl, toss the sliced vegetables with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper.
- Place the seasoned vegetables in the air fryer basket and cook for 15-20 minutes, shaking the basket every 5 minutes, until they are tender and slightly charred.
- While the vegetables are cooking, warm the tortillas in a pan or in the microwave.
- Once the vegetables are done, assemble your fajitas by adding the vegetables to the tortillas and topping with your desired toppings.
