Panisse, also known as panisse fritters or chickpea fritters, originated in the Provence region of France. It was traditionally made with chickpea flour, water, and olive oil, and served as a street food snack. Today, it is a popular appetizer or side dish in many Mediterranean countries, often served with a dipping sauce.
