Ingredients
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
2 tablespoons melted butter
1 cup fresh blueberries
Cooking spray
Maple syrup (for serving)
Directions
- In a large mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- In a separate bowl, whisk together 1 cup of milk, 1 egg, and 2 tablespoons of melted butter.
- Slowly pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in 1 cup of fresh blueberries into the batter.
- Preheat your air fryer to 375°F.
- Lightly grease the air fryer basket with cooking spray.
- Using a 1/4 cup measuring cup, pour the batter onto the greased basket, leaving enough space between each pancake.
- Cook the pancakes for 5-6 minutes, flipping halfway through, until they are golden brown and cooked through.
- Repeat with the remaining batter, greasing the basket as needed.
- Serve the blueberry pancakes warm with maple syrup and additional blueberries on top.
Notes
- Make sure to not overmix the batter to avoid tough pancakes.
- You can use frozen blueberries instead of fresh, just make sure to thaw them before adding them to the batter.
- You can also add a teaspoon of vanilla extract to the batter for extra flavor.
