Fajitas are a popular Tex-Mex dish that originated in the Rio Grande Valley of Texas in the 1930s. The dish was created by Mexican ranch workers who grilled skirt steak, sliced it, and served it with tortillas. The term ‘fajita’ comes from the Spanish word ‘faja’, meaning ‘belt’ or ‘strip’, which refers to the cut of meat used for the dish. In the 1980s, fajitas gained widespread popularity in the United States and have since become a staple in Mexican restaurants.
